There may be other great bagel recipes out there, but since this one by Claire Saffitz is the first one I tried, and the bagels were beyond sublime, I'm not motivated to look much further. These were tasty, chewy, crusty, perfect New York style bagels right from my own oven. Much easier than one might think. Just get all the right ingredients, set up an organized mise en place, and follow her very clear directions (especially when you demistify the process by watching her video). The best bagel I have ever eaten--and I grew up in New York!
